Orange cake

Orange cake

Ingredients:

250  ml  butter
1  cup  sugar
3  extra-large eggs
310  ml cake flour
2  tsp  baking powder
Salt, to taste
4  tbsp cornflour
125  ml milk

 For the syrup

1/2  cup sugar
250  ml  orange juice
4  tbsp  lemon juice
1  tbsp  golden syrup
2  tbsp  grated orange rind

Method:

  • Preheat oven to 180 C and grease a 30 x 30 cm ovenproof dish with butter or nonstick spray.
  • Cream butter and sugar together until light and fluffy. Add eggs one by one, beating well after each addition.
  • Sift dry ingredients together and add it to the butter mixture, alternating with milk. Mix well and turn the batter into the prepared dish, spreading evenly.
  • Bake for about 45 minutes or until done and a testing skewer comes out clean. 
  • Heat ingredients for syrup together.Bring to a boil, simmer for 5 minutes and pour over the cake.
Note:
      Serve lukewarm or cold with a scoop of plain yogurt.
