Baked cheesecake


Ingredients

1  packet  Marie biscuits, crushed
125  g butter, melted
250  ml sour cream
250  g smooth cottage cheese
250  g chunk cottage cheese
11/2  tbsp cake flour
150  ml sugar
1  tsp  vanilla essence
2  eggs, separated
Pinch cinnamon powder, to sprinkle
Fresh raspberries, to garnish
Caster sugar, to garnish

Method:

  • Preheat oven to 180 C. Mix biscuits and butter together, then press into the base and edges of a large pie dish to form a crust.
  • In a large bowl, mix sour cream, cottage cheese, flour, sugar, vanilla and egg yolks.
  • Beat egg whites until stiff peaks form, then fold in with the rest of the ingredients. Pour mixture on biscuit base and bake for 30-40 minutes.
  • Allow cake to cool then sprinkle with cinnamon powder, raspberries and castor sugar.
